description_recompenses
A particularly warm year with a very mild and dry winter followed by a slightly more humid spring and a period of intense warmth during the summer up until the harvest. Flowering was very even and successful thanks to a steady northern influence in late June. The vines were able to maintain a healthy foliage during the hottest summer period, allowing optimum ripening conditions.
Harvest began on 31st August for the Syrah and 6th September for the Grenache.

Cépages:

60% Grenache
40% Syrah

Terroir:

For this cuvée, we harvested the Grenache and Syrah on clay soil from the plots immediately surrounding the estate. The soil here is particularly deep and therefore there was no hydric stress. This ensures a greater freshness and a beautiful clear hue.

Vinification:

Direct pressing. Settling for 48 hours at 15°C and then drawing off of the clear musts. Fermentation is performed over 25 days in sealed concrete tanks with temperatures maintained under 16°C. After racking at the end of the alcoholic fermentation, the wine spends 4 months in tank before bottling.

Vegan Friendly.

Service & accords:

Enjoy between 10 et 12°C.
Roasted salmon steack
Half cooked tuna

Age des vignes & rendement:

5 years for Grenache and 12 years for Syrah

The 44ha of the vineyard extend on gentle slopes that give their name to the estate. “Escalion” means “slope” in provençal language.
