Blend of Grenache and Syrah grapes.
Blend of Grenache and Syrah grapes. The grapes are harvested in the early morning hours, when the temperature is cool and to ensure they arrive fresh at the winery. They are then de-stemmed and crushed before spending several hours macerating on the skins at low temperature to acquire the delicate pink hue. The clear juice is drawn off and fermented at around 12° to 14°. A brief 3-month maturation takes place in tank before bottling.
